Lovely oatmeal, even when it’s hot I love it.

Chocolate Pancakes

Chocolate Pancakes for breakfast are pretty much the best idea ever. These are quick and have just a few healthy ingredients.

  • 1 egg
  • 1 ripe banana
  • ½ cup oats
  • 1 sachet options hot chocolate
  • Honey (drizzle to taste)

Mash the banana with a fork and beat in the egg until a fairly smooth consistency. Stir in the oats and leave aside for 2 mins to absorb a bit of liquid. Then add the hot chocolate powder.

Heat a pan on a medium heat and spray with low cal spray. Separate the mixture into 4 equal amounts on the pan. Fry for a few minutes on both sides until firm. They might not look too great when cooking but trust me – you won’t regret it!

Drizzle with honey and add any fruit you wish.

Roast chicken, balsamic onions and steamed broccoli

Chicken on the bone is so juicy and tasty. I roasted this leg joint for 45mins at 180c sprinkled with paprika and cayenne pepper. I put the sweet potato on the shelf beside it with no seasoning for the same time as the chicken.

I steamed the broccoli for four minutes until vibrant but still crunchy and caramelised the onions in 2 tbsp of balsamic vinegar.

Fourth of July Fruit Kebabs

Thread whatever combination of fruit onto BBQ skewers for a healthy snack. I made these for a 4th of July party with blueberries, strawberries and marshmallows

Veggie Brunch Feast

Weekends are made for breakfast FEASTS. I love having something a bit different at the weekend when I have more time. During the week I throw some oatmeal together and burn my mouth trying to eat it fast enough.

I had a bit of leftover roasted butternut squash in the fridge, some baby courgettes, bell peppers and two eggs. I have seen eggs cooked in peppers floating around pinterest for a while so gave it a go.

I cut rings of pepper about 1cm thick and added to a pan on a medium heat. I cracked the eggs into a bowl first so I could easily pour them in. When adding the eggs I pushed down on the pepper to create a seal with the pan for about 20seconds so that the bottom layer of egg cooked before any could escape into the pan.

As an afterthought I added two vegetarian sausages. Delicious, healthy and colourful breakFEAST.

Salad for today - Turkey, mixed leaves, roasted butternut squash, peppers, baby courgettes (raw) and blueberries.

Summer Melon Breakfast Boats

I never used to be a breakfast person, I would much rather have had an extra ten minutes in bed. I like to make breakfasts a bit of a treat so I can motivate myself to move when my alarm clock goes.

These can be made the night before, covered in foil and stored in the fridge for instant refreshment. They are also great on a sunny afternoon when you get home from work.

Scoop out the melon seeds and discard. Hollow out a little deeper and enjoy while you are preparing the rest. Fill the cavity with any fruit of your choice. I added a cup of strawberries, one peach and a passion fruit.
